Banana Bread


I combined a few banana bread recipes and modified them into this recipe at the end of last year. It has since become a staple, and I must have made it 5 or 6 times, at least, in the past few months. One of my favorites.
The picture does not do it justice, but it’s very moist and flavorful, yet so easy to make. It’s not fancy, but it’s great to share at a tea party and kids will love it.

Ingredients

  • 3 or 4 very ripe medium bananas
  • 75 g melted butter
  • 1 egg
  • 1 cup sugar (You may reduce to 3/4 cup. I usually use of mix of golden caster sugar and brown sugar)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cup flour
  • Optional: 3/4 to 1 cup walnuts

Preparation

  1. Preheat the oven to 350°F / 175° C / Gas 4.
  2. Peel and mash the bananas.
  3. Add beaten egg.
  4. Add sugar.
  5. Add vanilla.
  6. Add flour, baking soda and baking powder.
  7. Pour in a lined cake tin.
  8. Bake for 1 h to 1 h 10, until golden and cooked through (knife or skewer comes out dry).
  9. Remove loaf from pan and let it cool on a rack (to prevent from sweating in the pan).

[Comments:
Very easy to make. But do use super ripe bananas. No spices are added to this cake, so it relies heavily on its banana taste. If your bananas are not ripe enough, it won’t be as good, you’re warned!]
